Summer-Berry Compote

Ingredients:

2   cups fresh blueberries
1/2  cup packed brown sugar
2  tablespoons champagne or white wine vinegar
1/2  teaspoon grated lemon rind
2  tablespoons fresh lemon juice
1 1/2  cups fresh raspberries
1 1/2  cups fresh blackberries
2  peaches, each peeled and cut into 6 wedges

Directions:

1. Combine first 5 ingredients in a medium nonaluminum saucepan; bring to a boil.
2.Cover, reduce heat, and simmer 20 minutes. Cool to room temperature.
3. Spoon about 1/4 cup blueberry mixture into each of 6 shallow bowls, and top each serving with 1/4 cup raspberries, 1/4 cup blackberries, and 2 peach wedges.
